Chickpeas, puy lentils, baby spinach, garlic, ginger, thyme and chopped tomatoes slowly cooked with sweet potato and our own fruity but spicy curry sauce make for a tasty vegan dish that is regularly enjoyed by meat eaters and those following a plant-based diet alike. Served stuffed back in a sweet potato shell.
